The construction of vats.
We can make the classic cone closed vats for fermentation and storage, but also the simpler open-cone vats for fermentation only. We also supply the more recent evolution of vats, with stainless steel bottom and top. They are mainly produced using oak from several sources in Europe while, for distillates or vinegar, we can also use other types of wood.


Vats
Attention to your needs.
The staves are slightly bent to about 2/3 of their height, with direct wood fire and always with the addition of water. The process takes much less time than the time needed to bend the barrel staves. This is why the vats are left on the burning brazier to reach the required or recommended toasting level.
Customisation
The vats can be customised with a range of steel accessories to facilitate their use during fermentation and/or storage. The final testing and painting (as for barrels) complete the production cycle.
